    ------------------------------CHICKEN SAVOURY------------------------------
    1 3/16 kg Chicken pieces
    5 T Ghee
    2 T Blanched almonds
    2 T Sultanas
    4 sm Potatoes, peeled & halved
    2 lg Onions, finely chopped
    5 Cloves garlic, finely
    Chopped
    1 T Finely chopped fresh ginger
    1/2 ts Chilli powder
    1/2 ts Ground black pepper
    1/2 ts Ground turmeric
    1 ts Ground cumin
    1 ts Salt
    2 md Tomatoes, peeled & chopped
    2 T Yoghurt
    2 T Chopped mint leaves
    1/2 ts Ground cardamom
    2 Inch cinnamon stick

    --------------------------------BRIYANI RICE--------------------------------
    500 g Basmati rice
    2 1/2 T Ghee
    1 lg Onion, finely chopped
    A good pinch powdered
    Saffron or saffron strands
    5 Cardamom pods
    3 Whole cloves
    1 Inch cinnamon stick
    1/2 ts Ginger powder
    2 T Rose water or rose essence
    1 1/2 ts Salt
    4 c Strong chicken stock

    Chicken Savoury: Heat half the ghee in a small frying pan, fry almonds until golden, drain. Fry sultanas a few seconds and set aside. Fry peeled and halved potatoes until brown, drain and reserve. Pour any ghee left in pan into a large saucepan, add remaining ghee and fry onion, garlic and ginger until onion is soft and golden. Add chilli, pepper, turmeric, cumin, salt and tomato. Fry, stirring constantly for 5 minutes. Add yoghurt, mint, cardamom and cinnamon stick. Cover and cook over low heat, stirring occasionally until tomato is cooked to a pulp. (It may be necessary to add a little hot water if mixture becomes too dry and starts to stick to the pan.) When mixture is thick and smooth, add chicken pieces and stir well to coat them with spice mixture. Cover and cook over very low heat until chicken is tender, approx. 35-45 minutes. There should be only a little very thick gravy left when chicken is cooked. If necessary cook uncovered for a few minutes to reduce gravy.

    Briyani Rice: Wash rice well and drain in a colander for at least 30 minutes. Heat ghee and fry onion until golden. Add saffron, cardamom, cloves, cinnamon stick, ginger powder and rice. Fry stirring, until rice is coated with the ghee. Add rose water or essence and salt to hot stock, pour over rice mixture and stir well. Add chicken savoury and potatoes and gently mix into rice. Bring to boil. Cover saucepan tightly, turn heat to a very low and steam for 20 minutes. DO NOT lift lid or stir while cooking. Spoon briyani onto a warm serving dish. Garnish with the almonds and sultanas and serve immediately.

    Ingredients
    Rice (Basmati): 300 gms.

    Chicken pieces: 600 gms.

    Whole garam masala: 2 tbsp.

    Sliced onions: 1 cup

    Chopped garlic: 2 tbsps.

    Chopped ginger: 2 tbsps.

    Red chili powder: 3 tsps.

    Coriander powder: 1 tbsp.

    Turmeric powder: 2 tsps.

    Bay leaf: 2 nos.

    Chopped tomato: 3/4 cup

    Chopped green coriander: 1 tbsp.

    Curd (yogurt): 1 cup

    Saffron: 1/2 gm.

    Garam masala powder: 3 tsp.

    Milk: ½ cup

    Butter: 50 gms

    Golden fried sliced onions: ¾ cup

    Ginger julienne''s: 1 tbsp.

    Oil: 3 tbsps.

    Mint leaves: 2 tbsp.

    Salt: To taste

    Methods
    1. Pick, wash and soak rice in water for about 30 minutes.
    2. Boil water, add ½ of the Whole Garam Masala , bayleaf and salt and boil rice till ¾th done. Drain rice and keep aside.
    3. Mix salt, ½ of the red chili powder, ½ of the chopped ginger, ½ of the chopped garlic, 1 tsp. Garam Masala Powder, ½ of the turmeric powder and Curd/Yogurt. Mix well and put chicken pieces in this for an hour.
    4. Heat oil in a Patila or a thick bottomed pan. Add remaining Whole Garam masala .Let it crackle. Add Sliced onions and sauté?T until light golden brown.
    5. Then add remaining chopped ginger, chopped garlic, coriander powder, turmeric powder, red chili powder, 1 tsp. Garam Masala powder and chopped tomatoes. Cook for about 5 minutes. Add marinated chicken and cook till chicken is tender.
    6. Dissolve saffron in warm milk and keep aside.
    7. Arrange alternate layers of chicken and rice. Sprinkle saffron dissolved in milk, remaining Garam Masala powder, ginger julienne''s, mint leaves, golden fried sliced onions and butter in between the layers and on top. Make sure that you end with the rice layer topped with saffron and spices.
    8. Cover and seal with aluminum foil or Roti dough. Cook in a preheated oven, for 10-12 minutes. Alternatively cook on an indirect slow flame for 10 to 12 minutes.

    Chỗ VH không có bán Garam Masala à? Chỗ SS bán nhiều lắm, hình như của hãng Knor thì phải (SS ở Bắc Âu, híc). Chứ tự làm Garam masala thì cũng có vẻ cần nhiều loại gia vị để trộn lắm. Đây là một công thức mà SS search được này. Dạo này SS cũng ngại nấu món Ấn vì phải tẩm ướp cầu kỳ quá
    Basic Garam Masala
    Ingredients:
    2 cinnamon sticks
    3 bay leaves
    1 1/2 ounce cumin seeds
    1 1/2 ounce coriander seeds
    3/4 ounce green or black cardamom seeds
    3/4 ounce black peppercorns
    1/2 ounce cloves
    1/2 ounce ground mace
    Directions:
    Break the cinnamon sticks into pieces. Crumble the bay leaves. Heat a heavy frying pan and after 2-3 minutes put in the whole spices. Dry roast over a medium heat until the color darkens, stirring or shaking the pan frequently to prevent burning. Leave to cool, then grind and blend with the mace. In an airtight container, the mixture will keep for 3-4 months.
    * To make a mild and subtle Moghul Masala, use only green cardamoms, cinnamon, black peppercorns, mace and a few cloves.
    * For a hot Gujerati Masala, add sesame seeds, fennel seeds, ajowan seeds and chilies.
    * For a mildish Kashmiri Masala, use black cumin seeds, green cardamoms, black peppercorns, cloves, cinnamon, mace, and add a little grated nutmeg.
    * For a hot Parsi Dhansak Masala, add fenugreek seeds, mustard seeds, chilies and ground turmeric, and double the amount of coriander seeds.
    This recipe for Basic Garam Masala serves/makes 6 oz.

    Dạo này SS chịu khó đổi avatar nhỉ, hihi!
    Nhìn mấy món ăn thấy cũng thèm nhưng , thứ nhất dốt tiếng Anh đọc không hiểu nên nấu làm sao, thứ 2 không biết tìm gia vị ở đâu, híc híc, nên Trang đành ngồi nhìn hình cho no mắt vậy.

    Hì. Xin lỗi vì SS lười nên ngại dịch ra tiếng Việt quá. Để bao giờ rỗi rãi với lại hết lười SS dịch lại công thức nấu vài món Ấn ra tiếng Việt nhé
    Mà hầu hết gia vị ở Việt Nam mình đều có đấy chứ. Chắc chỉ có một vài loại là không có thôi. Còn cái bột Garam Masala làm sẵn kia thì ở VN không có rồi. Muốn có chắc phải tự làm thôi. Nhưng mà mấy món Ấn phức tạp đấy dùng nhiều loại gia vị quá, đi mua đủ ngần đấy loại để về nấu cũng ngại. Thôi, nếu muốn ăn món Ấn cứ ra nhà hàng Ấn là nhanh nhất
    SS hay đổi avatar là tại vì bây giờ ở chỗ SS mùa hè rồi, nhiều hoa nở lắm. Suốt ngày toàn vác máy ảnh đi chụp hoa hoét ấy mà. Mà chụp ảnh xong rồi không dùng làm avatar thì có biết dùng làm gì nữa đâu
