    This is Barbara Klein with the VOA Special English Development Report.
    Cold storage can keep foods in good con***ion for months after the growing season. But foods can be damaged if they are kept too cold. So this week we offer some advices (the same mistake as others) about cold storage. It comes from Practical Action, and an anti-poverty group in Britain. Practical Action is the new name for the Intermediately Technology Development Group.
    The experts says (cần fân biệt rõ: say /sei/ và says /sez/, 2 âm này khác hoàn toàn) the best way is to prepare foods for storage while still in the field. For the best results, harvest fruits and vegetables at the correct harvesting time. And try not to damage them. Use the soft a sharp knife.
    Place the harvested items on a clean surface or directly into storage containers. Do not place them on the ground. Dirt can leave lead to bugs (sâu bọ) and fungus (nấm mốc) growth on in cold storage.
    Use clean water to remove dirt, and keep the water clean. But it is usually better not to remove outer leaves from fruits and vegetables before storage. Without the leaves, food can become dry.
    Fruits and vegetables must be cooled from field heat before they are put into storage. If they are placed in cool water, however, it can spread fungus throughout the food. A better idea is to harvest foods either early or late in the day, then leave them cool naturally.
    The experts at Practical Action says all fruits and vegetables have a critical temperature for storage. Damage may happen if they get any colder. With potatoes, for example, the (soil) cell structure can break down.
    Some fruits and vegetables must be stored at 0 to 4oC. Others need 4 to 8o. And still others must be stored above 8 degrees.
    Wet the fruits and vegetables so they do not become too dry during storage. The beat best time to do this is before storage. Cover these items in plastics once they reach the correct storage temperature. Most fruits and vegetables need the relative humi***y in storage to be kept between 85 to and (between fải đi với and ko thể đi cùng to) 95%.
    Finally, air-flow must not be restricted. Leave the space between the food containers and the walls of the storage area. Keep the space clean and, lastly, try not to open the doors too often.

    Bài này coi như xong, ngày mai sẽ có bài nghe mới, mọi người chờ nhé.
    Maroon sẽ tổng kết lại bài này 1 chút:
    - Ngoại trừ bài cuối cùng, còn những bài trước đều bị lẫn lộn giữa fruit và food, dù 2 từ này phát âm hoàn toàn khác nếu để ý 1 chút.
    - 1-2 bạn gì đó bị lộn giữa dirt và dust. dust chỉ là bụi bặm thôi, còn trên thphẩm thì bụi chỉ là 1 phần nhỏ trong số những thứ dơ bẩn khác, nên fải là dirt mới đúng.

Today, we will tell you some expressions that use other body parts: the back, shoulders and chest. When I am facing a lot of pressure at work, my back and neck will start to hurt. Sometimes, this tension is a result of too much work I have too many thing to do because my supervisor is on my back all the time. In other words, my employer is always telling me to do things. Sometimes, I want my employer to get off my back, I want her to stop criticising me and making too many demands on my times. I cannot say this, however. I would never turn my back on her and refuse to help when there is a need. If I did refuse to help, my supervisor might say bad things about me behide my back She might criticise me when I am not present. This would surely be a ??? in the back. It is never kind to unfairly harm or say bad things about other people. Sometimes, when I am very productive in my job, my employer give me a pat on the back. She praises my work. She might even say ?oI will scratch your back if you will scratch mine?. This means she will do something for me if I do something helpful for her, in exchange.Such an offer usually comes straight from the shoulder. My supervisor has a very direct, open and honest way of speaking. I know that my employer carries a lot on her shoulders. She is responsible for many things at the office and because she is so important, she is sometimes get to rub the shoulder with the top officials. She get to spend time with some very important people. I believe the top official ??? my superior. He never gives her a cold shoulder, he is never un friendly to her. He always treats her like she is an important part of the organization. I also ??? my supervisor, in fact, I think she is very effective in her job. Of course, I could yell my opinion at the top of my lungs or as loudly as I possiblly could. If I even feel good to get my emotion off my chest, it is always helpful to tell people how you feel so that your emotions do not trouble you. But it is not necessary for me to praise my superior. Most of my co-workers feel the exact same way about about her. So I think I will just safe my breath. I will keep silence because talking or repeating myself will not do any good.
